1) Slice the mushrooms and spring onions and cube the carrots. Keep everything aside

2) Arrange the loin slices on the work surface. Season with salt and pepper.

3) Scatter chopped parsley and Speck slices.

4) Roll up and thread the rolls with a toothpick.

5) Start the hob on the booster function and in a large skillet heat 6 tablespoons of evo oil.

6) Brown the roulades and once golden brown remove them from the pan and keep them aside.

7) Reduce the power to 3 and brown the carrots and spring onions in the oil.

8) Soon after, add the mushrooms and cook for 15 minutes, covering with the lid.

9) Add the roulades and beer.

10) Cover with the lid and cook on power 6 for 20 minutes.

11) Once the roulades are cooked, add the fresh cream and continue for another 5 minutes.

12) Serve hot with the vegetables and cooking sauce.
