  • 40 gr of soft butter
  • 3 yolks
  • 3 egg whites
  • 30 gr sugar
  • Salt to taste
  • 8 gr of brewer’s yeast
  • 150 gr of milk
  • Chopped parsley to taste.
  • Ingredients for stuffing:
  • 1 package of Squacquerone cheese
  • 15 slices of coppa or bacon
  • 3 yolks
  • 3 egg whites
  • 30 gr sugar
  • Salt to taste
  • 8 gr of brewer’s yeast
  • 150 gr of milk
  • Chopped parsley to taste.

1) Start by working the butter with the egg yolks.

2) Dissolve the yeast in the warm milk and pour it into the bowl.

3) Continue by sifting in the flour and salt.

4) Mix thoroughly until the batter is smooth and creamy.

5) Cover with plastic wrap and let rise for 1 hour. The mixture should then appear puffy and fragrant.

6) Next, whisk the egg whites with the sugar, then incorporate them into the batter, mixing from the bottom up.

7) Add the chopped parsley.

8) In a hot pan greased with oil, go and form the blinis.

9) Once they are cooked, stuff them with Squacquerone cheese, completing the work by adding coppa or bacon.
