  • Ingredients:
  • For the ribs:
  • 1 kg pork ribs
  • 1 teaspoon chilli pepper
  • 1 teaspoon mustard powder
  • salt to taste
  • 1 teaspoon sweet paprika
  • 1 teaspoon mustard powder
  • 1/2 teaspoon black pepper
  • 1 garlic clove
  • Olive oil to taste
  • salt to taste
  • Ingredients:
  • For the barbecue sauce
  • 1/2 white onion
  • 10 g brown sugar
  • ketchup
  • 2 teaspoons of Worcestershire sauce
  • 1 teaspoon sweet paprika
  • 1 teaspoon mustard powder
  • 1/2 teaspoon black pepper
  • 1 garlic clove
  • Olive oil to taste
  • salt to taste
  • Ingredients:
  • Fresh mixed salad
  • 1 kg pork ribs
  • 1 teaspoon chilli pepper
  • 1 teaspoon mustard powder
  • salt to taste
  • 1 teaspoon sweet paprika
  • 1 teaspoon mustard powder
  • 1/2 teaspoon black pepper
  • 1 garlic clove
  • Olive oil to taste
  • salt to taste

Preparation: 25 minutes

Bake in a static oven at 200° for 2 hours (180° for 1 hour and three quarters with a fan oven)

1) Take the meat and rub it on both sides with the spice and seasoning mix. Wrap the meat in cling film and leave it to rest in the refrigerator for at least two hours.

2) Remove the foil and bake the ribs, covered with aluminium foil, in a static oven preheated to 200° for about 2 hours (with a fan oven, 180° for 2 hours).

3) While the meat is cooking, start preparing the barbecue sauce.

4) In a pot, pour a little olive oil, chopped onion and garlic. Brown everything. Then add the brown sugar, paprika, pepper and stir to mix the ingredients. Then add the Worchester sauce and mustard.

5) Now add the ketchup, a pinch of salt and cook for a few minutes to thicken the sauce. Turn off the heat.

6) When the ribs are cooked, take them out of the oven and brush them with the barbecue sauce on top.

7) Bake them for 5 minutes at 200° for the glazing.

8) While waiting for the meat to glaze, prepare a fresh mixed salad to accompany the ribs.

9) When the glazing is complete, remove the ribs from the oven and serve with the fresh salad and barbecue sauce.
