  • 300 gr flour 00
  • 140 gr cold water
  • 30 gr butter
  • 1 pinch of salt

  • 300 gr cooked ham in strips
  • 200 gr sweet provolone cubed
  • 30 gr butter
  • 1 pinch of salt
  • Ingredients:
  • For the breadcrumbs:
  • 3 eggs
  • Breadcrumbscrumbs q.b
  • 1 pinch of salt
  • 1 pinch of salt

Preparation: 30 minutes
Dose for 25 pieces
Cooking in oil 2 minutes


1) Mix flour, salt, butter and water in a large bowl. Start kneading.

2) You will obtain a smooth and soft dough. This will take about 10 minutes. Add more water if you notice that the dough is too dry.

3) Let the dough rest covered with a cloth for 10 minutes.

4) On the floured work surface, roll out a thin, square-shaped sheet of dough 40 cm on each side.

5) Cut out discs with a diameter of 10 cm.

6) In a bowl, combine the ham with the provolone cheese and place a spoonful of stuffing in the centre of each disc.

7) Close in a crescent shape, taking care to seal the edges well.

8) Do not moisten the edges with water or oil.

9) Pass each smile in the beaten eggs with a little salt and then in the breadcrumbs, eliminating the one in access. You will obtain a cleaner fried food.

10) Fry then in hot oil, turning them from time to time, to have an even browning.

11) Serve hot accompanied by salad.

To preserve them, it is advisable to place them in layers in freezer containers, taking care to place a sheet of baking paper between one layer and another.

This will ensure that they do not stick during freezing and that they can be used more easily when serving. They should not be thawed before frying, it will only take a little longer to cook them.

They are also perfect for an aperitif or children’s parties.
