  • Ingredients for cooked rice:
  • 120 gr arborio rice
  • 700 gr almond milk(alternative lactose-free beverage)
  • 50 gr granulated sugar
  • 1 pinch of salt
  • 140 gr sugar
  • 80 gr potato starch
  • 80 gr almond flour
  • 70 gr melted butter
  • 40 gr of orange juice
  • 1 pinch of salt
  • 1 organic, untreated orange and 1 lemon
  • Sliced almonds to decorate
  • Ingredients for the cake:
  • 200 g of already cleaned carrots
  • 3 eggs
  • 6 gr cake yeast
  • 30 gr anisette or sweet liqueur
  • 140 gr sugar
  • 80 gr potato starch
  • 80 gr almond flour
  • 70 gr melted butter
  • 40 gr of orange juice
  • 1 pinch of salt
  • 1 organic, untreated orange and 1 lemon
  • Sliced almonds to decorate

Preparation 40 minutes
Rice cooking 35 minutes
Baking cake oven 170°C ventilated function for 50 minutes

1) In a tall saucepan pour the milk and add the sugar, salt and rice.

2) Start cooking and from when it begins to boil calculate 35 minutes or until the rice is well cooked and the liquid has become very thick.

3) Transfer to a bowl and let cool.

4) In a large bowl, cream the soft butter with the sugar and egg yolks with electric whips, obtaining a light and fluffy mixture.

5) Flavor with the grated citrus zest and orange juice. Continue whipping with the whips another 4 minutes.

6) Sift the starch, salt , baking powder and almond flour over the mixture . Whisk another 5 minutes.

7) Add the cold rice and liqueur to the mixture, stirring with a rubber spatula.

8) In a clean bowl whip the egg whites to stiff peaks and incorporate them into the rice mixture gently,

9) Finely chop the carrots and squeeze them with your hands, letting out their liquid.

10) Once all their liquid has been extracted, add them to the cake batter.

11) Grease and coat the cake pan with starch and pour in the mixture.

12) Top with almond slivers and bake in a preheated oven at 170°C ventilated function for about 50 minutes.

13) Take the cake out of the oven and after 10 minutes remove the mold rim, letting the cake cool completely.

14) Dust it with powdered sugar and serve.
